I'm sure that happened all the time. Early Egyptian mythology, as well as early Greek, was changed in later periods to accomodate people and their worshipping habits. In mythology, gods often represent forces of nature or human nature, and they were depicted as good or evil as the circumstances permit.

You seemed to be confused on this issue.
Different parts of the Bible were written in different places according to the time in which it was written. The Hebrews were never conquered by the Assyrians -- they were enslaved by the Egyptians, they themselves conquered the Caananites, and after establishing their own kingdom, they were conquered only by the Babylonians who were later, in turn, conquered by the Medo-Persians.
